Rather than provide answers it kind of asks more questions…

These engines were made on an assembly line and were seemingly mechanically identical so how different could they be on a dyno?

How many engines did the engineers pull off the assembly line and test on a dyno before they were satisfied that they would have one acceptable?

I am more intrigued with the sunroof/hardtop than the engine!

Perhaps the engines were all tested on the dyno, and the instruction was "Out of the next 1,000 engines to be produced, take the one with the most power" or something along those lines (and in German  ;D).

Actually they all were run in on a dyno.  Moss's car is interesting in that the engine on the data card is not the engine in the car.  The 250 engine that was selected must have been installed after the car left the assembly line.  Personally, I think they are pretty low on their estimate.  Even though the car needs a restoration or refurbishment the Stirling Moss Provenance carries much more weight than say a John Lennon car.  With the rise in popularity of F1 in the US I think it will bring much more.
