The replacement probe has a 12.8mm OD.  The original is 12.0mm.  The opening into which the probe fits is 12mm ID.  The new probe sits proud of the opening blocking the threads from engaging.  The new probe alse has a shorter hex head and a noticeably longer threaded section.  Finally, the probe isn't attached to the threads.

Am I supposed to shove it in harder?  Is the threaded portion supposed to crust the top of the probe to create a seal?

FWIW, I don't see any for sale that look like the original.

A Belgian-based seller on eBay.

Is there a go-to source for these I should use for my second try?

Do you need just the bulb at the end or the whole temperature gauge?

Depending upon the vendor's willingness to accept a return and how much you have to lose if things go bad, you might try reducing the offending diameter.  Your picture indicates only an 0,8 mm variance and there may well be enough metal in the area so that a reduction will not compromise integrity. Before attempting any modification I would test the unit/gauge combination with heated water so as not to waste my time on bad components/

I think your unit looks like the bulb is a bit ot of center...

Perhaps one of the black scenarios may be it gets stuck in its hole...

Thanks for the advice, all.

I did test the assembly in the kitchen and it works perfectly.   I will see what can be done to massage the fit when I return to town next week.
