Temperature Probe replacement

One of my 2019 winter projects is to replace the broken capillary line from the Temperature gauge to the engine. Unfortunately while working on the fuel injector I pushed against the capillary tube and it ruptured.
I have a company to send the capillary line for repairs but my question is how do I get to the capillary tube line?
I know my first step is to remove the line from the dash gauge then (in the engine bay) do I unwind all the wrapping around the wiring harness or is there a trick to slipping it out but keeping he wiring harness tape in tact?
If I have to remove the harness covering where do I find a good reproduction of the wrapping to replace over the harness.
My Pagoda is a 44,000 mile one owner original car and I want to leave it as close to original as possible.

Yes I reviewed at the Wiki but it doesn't address my question below:

Normally the capillary tube has a plastic sheathing around it and it is not wrapped to other wires. Tape a small diameter rope to the bulb before you pull it through the fire wall and out of the dash. The rope will stay in place afterward. Later you can use the rope to pull the new capillary tube back through in reverse, exactly the same path! Use some blue masking tape and Vaseline as needed to help the pull.

Have you thought of this?
The wire wrapper is fastened at both ends.
Why not loosen the other end at the cluster, tie/tape a fishing line to the capillary tube and pull out? Use a fishing line to pull the new capillary tube in and then fasten to the bulb(tell the repair shop to do this).
