How would I change the tumbler in my trunk lock to fit a new key? 

It is the two-sided late 280SL (build date 4/1970) key.  It should fit the ignition, door, glove box, trunk and gas cap.

I guess I could take it to a locksmith.

The removal is shown in the tech manual.  It’s very straightforward.  Here’s the link:

If you are matching it to the other locks on your car, you’ll need wafers that are Ymos HF style. (I’m assuming you have an HF key way. Look on your build card in case you don’t remember.) They are not readily available and you may have to do some searching.  I doubt your average locksmith will have them.
