I've looked through the photos of your 280SL, what are your questions?

What is your goal....Are you just curious about what's not original? Do you want to take the car back to original? If so, how far? Your end goal will determine the direction of the path you take and how far down that path you go.
There are a lot of different kind of values, and each of them varies. The following are different....insurance, estate planning, fair market value.
Things that stick out to me on your car as not being original....
-In-line fuel filter off the gas tank
-Your photos show two different sets of door panels, diamond stitch set incorrect
-Your photos also show two different center consoles, black/dark center console incorrect
-Speakers in rear parcel shelf are aftermarket, and carpet has been cut up
-Seats have been recovered, headrests not done properly. Seat bottoms appear to have too much padding
-Someone added replacement stickers under the hood, odd and incorrect placement
-Half of the brake booster vacuum hose has been replaced with the wrong material. 2 halves are non-matching
-Convertible top storage compartment should not be carpeted, that has been added
-Convertible boot lid re-covered incorrectly- Multiple pieces with contrasting stitching.
-Hardtop headliner and wood appear to have been dyed black
-Dash wood has incorrect finish, too glossy
-Visors have been replaced, shouldn't be black
-Dash has been recovered, incorrect stitching
-Original window sticker says "U.S. Equipment", but has KM speedo

Euro cars had black headliner and black sun visors. The car has been ordered with some US equipment but left the Euro gauges installed. I bought and installed new Euro headlamps. Thank you for looking it over.

Agreed with Pawel66, headliner was tan, Sun visors tan. Was this a Euro or US spec Pagodas? Do you have the data card, it will say on card.

From the link above, the car was collected from the factory. Country code on data card 873 Saudi-Arabia.

Not a German car. 887 in the Auftrags-Nr field indicates it is a car for Asian market. However, 887 is not Saudi-Arabia as earlier mentioned.

What would be the "US options ordered"?
I am struggling a bit here - US options ordered suggests there were some exclusive US options. Which ones would that be?

US options might be slightly different engine (to meet emissions standards for example), side markers, bumper overriders, the sealed headlights and related modifications, possibly even the 4.08 differential ratio.

Right, but these are US version features, not options ordered. Maybe except bumper overrides, not sure if they were option in Europe.

Auftrags-Nr (order no.) 88731127
The order number consists of eight digits:
The first digit is the last digit of the year in which the order was placed (in the above example it is 8, the order was placed by the dealer in 1968). The next three digits identify the country from which the order was placed (in the above it is 873, which is Saudi-Arabia)
The next four digits are sequential by dealer.
The car was for Saudi-Arabia.

I understand the flip of country code and year order in Auftrag no. was in 1970, correct?

Owner was stationed in Saudia Arabia.
The car was ordered in Saudi Arabia with pick up by owner at the German factory.
Ordered with US lights but Euro gauges. The owner picked up the car at the factory, registered it in Germany for a few month to be able to drive it there. Then the factory organized the shipment of the car to Texas.
European cars with black seats had black sunvisors, headliner, hard top and hub caps.
