My father's car originally came with the 747 Dark Green soft top. I'm not having any luck with GAHH and a few others.

There have been a few owners on here who were pleased with their tops, strange though as these are now apparently owned by GAHH, you'd think they would have referred you to them for a particular colour

Appears you are working through a number of items you will be addressing. I looked back at your earlier posts and unless I missed it, you haven’t mentioned the original and present paint colors(s) of your car.
Do you have the data card you can post to show what the original car was like or can you post a few current pictures. The data card might help others answer the questions you are raising.

Moss green metallic, cognac 8006 , brown 8008 , soft top dark green 6004

You should not have difficulty finding any of those “original” colors. To the best of my knowledge, all are still in production. The reason why I enclosed original with quotes is that nothing will match exactly to what was there when the car was new. Most products today are simply formulated differently and therefore the color value, pattern, texture, etc will vary from what was in your car originally. If you’re doing a complete rehab of the interior, it won’t matter.
As for leather vs MBTex, I would base my choice on how much maintenance you want and how much sunlight will it be subjected to. Both will need periodic cleaning but leather will require more attention. Additionally neither the MBTex and most leathers are not really of the same quality as the originals. The Tex is not quite as durable and most leathers are aniline dyed as opposed to vat dyed as the original material. You can still source it, but it’ll cost you!

I was under the impression that the original leather for our cars was surface dyed, not vat dyed. If you look at a piece of leather from an original seat, the bottom will be rough(ish) and a tan/brown. Only the surface will have the leather color.
