Which oil do any members use in their ZF 5 speed gearbox ?

Not sure about that but it should be red.  :)

Yes, and some are blue for hydrac transmissions but most modern ATF is red. Any ATF should work, but a ZF 5 speed is an extremely rare and valuable unit which really doesn't hold a lot of lubricant, so I use the best I can find which is a synthetic.

Sure. AMSOIL, Quaker State, Royal Purple, etc.  Most are expensive but you only need about two liters so it's not a big thing. I also use synthetic lubes in the entire car. Engine, transmission, rear axle, power steering, grease. Lubes are pretty cheap compared to engine rebuilds or any other part of your car.
