I'm assuming this should be glued in place? Use windscreen polyurethane stuff?

At the factory they used a contact cement.....it's still available from Mercedes (part number 000-989-92-71-09) or Teroson through a distributor. It's costly, and has a short shelf life, but is the best contact cement I've ever used. I also use it for when I do leather/vinyl work on interiors, tight/odd shaped corners in carpeting, and it's an excellent glue for soft top installation. It also has a moisture resistance that others brands pale in comparison to.

Thanks Aaron... I have to do the interior of both cars so it's probably a good investment. Is this what you'd use for the bonnet/hood insulation on the later cars? There's a w123 I need to put it on.

No, a different type of glue is used for the hood pad insulation. It's still a contact cement, but of a much thinner consistency. Part number 000-989-82-71. It comes in a quart can with a lid that pries off much like a paint can. You'll apply the product with a foam or bristle brush, but quickly, as this product has a shorter flash time. This glue is also used to adhere the wool pad to the door cards, or any other large surface area textile that needs to be glued.
Alternatively, you can use Permatex or 3M brand heavy duty adhesive in an aerosol spray can. It does just as good of a job.

A friend turned me on to this glue. It is a sprayable HHR (High Heat Resistant) contact cement. I use it for everything. Available in gallons only.

Looks like the door rubbers are glued on as well! I was expecting clips. (250se coupe)

For door rubbers you need a different glue! If it is rubber use 3M weatherstrip adhesive 08008. If it is a new seal then it is most likely made of EPDM (not rubber) and then you need 3M weatherstrip adhesive 08011. Here some earlier discussions:

Thanks for the tips! I've found the 3M 08011 locally.
They're all new seals so I assume they're are epdm.
