I am going to remove the head on my 230sl and was wondering if it is it necessary to remove the timing chain cover.

No it is not. However, set the engine at top dead center #1. Be sure the number one cam lobes are pointing up.
Do not rotate the engine after that or you might disrupt the injection pump timing if the chain is allowed to skip on the IP sprocket.
You will also need to remove the chain tensioner, tensioner arm with sprocket, and cam gear. You can use a long zip tie attached to the timing chain and drop it down into the engine block so it is out of your way.

Actually there is no timing chain cover on these engines. The chain gallery is closed and you access it from the top (valve cover) or the bottom (oil pan). When removing the head just remove of the valve cover to begin and follow Tyler's instructions.
