Car is a 1965 230SL. The injection pump has a red "Oel" cap over the filler. The dipstick is missing from the inside of the cap. How far below the hole should the oil be? (And, where could I buy a cap with a dipstick?)

Welcome. The dipstick is in a separate location from the red cap. Feel around down there lower and you will find it. It is a T-shaped handle that unscrews.

If the pump is over fillled or the oil is dirty you can suck it out using various methods discussed on this forum and then carefully refill it to the line on the dip stick. Over filling will affect how well the pump works so pay attention to the level when checking.
I look at mine about twice a season because I know it's working right. If you pull the dip stick out and oil pours out all over the place, either someone over filled it, or the seals are leaking fuel into the bottom of the pump. I would monitor the oil level frequently if I found an over fiull oil level until I was sure it was simply over filled and not leaking seals.
