Heritage Woodworks have a very good reputation and can refurbish your original wood set.
I've not personally used them but I have seen their work and it's excellent.  http://www.heritagewoodworks.com/ (http://www.heritagewoodworks.com/)
When I restored my 1969 W111 280 Convertible more than 20 years ago you could still buy the wood complete new
from Mercedes, which is what I did. The finish was spectacular, but the fit was not as good as with the original pieces.
