My oil pressure seems to fluctuate with RPM. At idle oil press is low, but if you rev the engine the pressure will climb with RPM's and max out at around 2700- 3000 rpm. When cruising it is constantly pegged.
Anyone ever encountered this or know what is going on? And yes I searched to no avail... :)

I think that normally when idling oil pressure will be low (needle at horizontal or a bit higher), but as soon as you touch the accelerator it should move up to max. It's normal.
By the way, if you use the site search function (top right of the screen, in the purple bar) and type "oil pressure" in there you'll find lots and lots of relevant posts... even some that suggest that oil pressure will drop if the engine is really hot.

The oil pump is driven by the engine, that is why it has an effect on the pressure (and not the other way around as is commonly thought, pressure effects revs)
With a hot engine, the pressure should at the very least be 0,5 bar at idle. At 3000 rpm, the pressure should be at least 3 bar (maximum on your dial) so while you're still ok this means you are on the edge of tolerance, indicating significant wear or a clogged or faulty oil filter.
With an engine in good shape the pressure will already be 3 bar at ±1500 rpm. Also the oil pressure doesn't have to be low at idle, with a good engine this can be easily 2,5 bar (hot).
