OH man, something I look forward to doing; renovating the AC.

As aforementioned in another thread, when putting the AC box back together, I would block, or severely limit, the amount of airflow on that far right side vent.

Otherwise, 90% of the air flow will go through that vent and hardly anything out the center/left vents.

I'd replace:

blower motor, expansion valve, switches, and drier. Definitely test the evap for leaks. If it's suspect, I'd get a new one if they're available???

When the bonnet doesn't fit in the car, you have to transport it on top of the car.

After a bit straightening, the bonnet and trunk lid are ready.

Today I reassembled the hatch and door locks which have new chrome.
New keys have been made fitting in the locks, because there was only a ignition key with the car.

I may have missed it in a post, but color is the interior. Looks very similar to mine which is called 1065 Light Antique yellow leather

The color of the seats is 8000 beige.
The number of the corresponding carpet I don't know, it's also not in this list:

As far as I understand, other epoxy will be used just like the doors and the bonnet because it's aluminium.

Yes, the guy is very experienced with W113's.

In your photo showing your AC components I did not see the compressor mounting bracket. I see the Adapter plate for the rotary compressor. Do you plan to use the big beast bracket or one sourced from a sedan? The sedan bracket allows mounting the alternator in its original non-AC car location. The big beast bracket requires you to move the alternator up and place the compressor in the alternator position. Most find that the big bracket makes servicing the engine more challenging. Using The sedan bracket also requires a different upper thermostat housing with a taller neck so the radiator hose can clear the sedan bracket.
